Why NALAs Kitchen is different?

Someone asked me what makes me different from other similar places doing this. At first I wasn't sure but I had research before to see what competition is out there. I am different because I compose meals that are balanced for your diet, palate and wallet. Other kitchens are geared towards diets and cutting weight. I just like to make good food but I try to make everyone's fan favorites but in a healthy way. Everyone has to enjoy food and I don't consider my meals a diet plan, just good food that has a healthier alternative recipes. For example I have made Mac and cheese but used cauliflower instead of pasta to cut down on carbs. The cheese was still the same. Or if I have to coat something in flour I use whole wheat flour instead of regular flour, always cooking with coconut oil so everyone can get the benefits of the oil. I am obsessed with coconut oil, I literally use it for everything. Skin care, hair care, cooking, and more. I believe that is what makes me different from everyone else.

Portobello Burger

This was a fun dinner to make today for Monday's deliveries. I love mushrooms on my burgers and thought it would be great to incorporate that in this healthier version with turkey. 🍽🍔

Opened faced burger topped with Swiss cheese and turkey bacon served with a side of sweet potato hash.


BBQ Pulled Chicken with cauliflower “Mac and cheese” with broccoli 

This is a great low carb yet yummy comfort summer dinner. 

BBQ Pulled Chicken 🐔

Ingredients-chicken breast, onion, carrots, celery, mesquite seasoning, BBQ sauce (I made my own but I would highly recommend Sweet Baby Rays), salt and pepper.

Method-place chicken breast in pot with the onions, carrots and celery rough chopped. Add water and about a 2 tablespoons of salt to the water. Just enough water to cover the chicken. Bring pot to a low simmer and cook for about 15-20 minutes or until chicken is completely cooked. Once cooked cool in chicken broth and take out of broth (save broth for other meals) and begin to shred chicken add mesquite seasoning and BBQ sauce until you like the taste.

Cauliflower Mac and Cheese🧀

Ingredient-fresh cauliflower, mozzarella cheese, whole wheat all purpose flour, butter, garlic, cheedar cheese, cream cheese and milk

Method-cut the cauliflower to bite size pieces and place in boiling water and cook until tender. Once tender take out and cool in ice water to stop cooking. In a pot add about 2 tablespoons of butter and a minced garlic clove to the pot and cook until aromatic. Add the flour and cook on low heat for about 6 minutes, stirring constantly so it doesn’t burn. Add the milk, about 2 cups and whisk into put add the cheeses (cheedar, mozzarella and cream cheese) and whisk until everything is melted. Checked seasoning and once you are happy with the flavor. In a baking dish add the cauliflower to the dish and top with the cheese sauce bake in a 350 preheated oven for about 10min. It will start to bubble and look like your classic Mac and cheese 🧀 but you will have no guilt after. 

Broccoli

Ingredients-broccoli, salt and pepper

Method-cut broccoli to bite size, bring a pot of salted water to boil and add the broccoli. Cook until tender. Eat and enjoy immediately or plug in cold water and reheat later.
